First of all, soak the raisins in rum. If you don’t have it, then cognac or brandy will do just fine. Also no? Well then, let there be water. Place the salad mix on a large flat plate. Today I had regular lettuce leaves and arugula on hand (I love it). Chop the onion into thin half rings (I have half a rather small head) and place it on the salad mix. Next come the grapes. It should be of the sweet variety. If the grapes are large and contain seeds, cut each berry into 2 halves and remove the seeds.

I always make this salad if I previously had oven-baked chicken on the menu. Our family is not the most ardent fan of breast, so it always remains partially and its direct path is in salads. Cut the breast into small pieces and distribute over the salad.

On top - raisins. Dressing - just mix vinegar, oil, a pinch of salt and sugar with a fork. If you don’t have fresh tarragon, use dry tarragon like I did this time (you need a couple of pinches). We take a plate in which we will serve the appetizer and pour our aromatic oil into it through a strainer. I don't always remove the basil. I'm quite comfortable with him too. Serve with sliced ​​baguette, for example. You can dry it a little in a frying pan or oven, or you can just fresh it, with a delicious crispy crust.

Fish baked with sauce

Preparation:

Place the fish in a baking dish. Sprinkle the fish with lemon juice on all sides (this is done not only to add flavor, but also to make the fish less boiled). Salt and pepper. Next, let's make the sauce. In a separate bowl, melt the butter and fry the flour in it until golden brown. Stirring continuously, pour in a glass of cream or milk. Add mustard, nutmeg, pepper, salt and finely chopped parsley. Stir everything continuously and bring to a boil (but do not boil).

The sauce should thicken. Pour the sauce over the fish, add pieces of butter on top of each and place in the oven at 200 degrees for 15 minutes. It is very important not to overcook the fish, otherwise it will turn out boiled and fall apart. 5. We take out the fish baked in the sauce, everything is ready. Before serving, you can garnish with lemon and tomato slices.

Chocolate truffles

Preparation:

In a small saucepan, combine cream, cinnamon and chili powder. Bring to a boil while heating over low heat and stirring. Add chocolate, broken into small pieces, and butter. Remove from heat and stir until all ingredients are combined into a homogeneous mass. If the mixture cools too quickly and the butter and chocolate do not have time to melt (for example, if you forgot to take the butter out of the refrigerator first to soften it), gently heat the entire mixture over water bath. Then add cognac and stir until smooth. Cover with cling film and refrigerate for at least 4 hours until the mixture is completely cool and firm.

Preparation:

Wash the potatoes and carrots thoroughly and boil them in their skins until tender. Cool, peel and cut into small cubes. Peel the hard-boiled eggs and cut them in the same way.

We wash the fresh cucumber and finely chop it together with the pickled gherkins. Chop the apple, trout and red onion. Place the chopped ingredients in a salad bowl. Season with mayonnaise and serve!

Salad with crab sticks and oranges

The salad is prepared in the standard way: boil the eggs, finely chop all the ingredients, crush the garlic, mix everything.

Hot:

WITH vine, baked piece with prunes

Cut a piece of pork so that you get a “book” - leaves on the cover. The thickness of the “sheets” should be at least 1 cm. Make a mixture for coating: mix mustard, mayonnaise, salt. Coat a piece of pork with the mixture on all sides, pouring a little between the “pages”.. Wrap in several layers of foil and put in the refrigerator to marinate (from 6 hours to 3 days).

Bake in the oven without removing from the foil at t=200°C for about 1 hour. Shortly before the end of baking, open the foil to create a golden brown crust.
In my oven, it took me 50 minutes of baking in foil, and then another 20 minutes with open foil. I checked the degree of readiness with a long sharp knife: I pierced the pork in the thickest place. When the juice flowing from the puncture site turned from red-pink to transparent, the pork, baked in a piece, was cooked.

Dessert:

Sponge roll with cherries and chocolate icing


Preparation:

Mix cherries with 2 tbsp. sugar, cognac or rum. Leave it to brew for a couple of hours.

For the sponge cake, beat the eggs with 100 grams of sugar and vanilla sugar until the sugar is completely dissolved. Gently fold in the flour using a spatula.

Place the dough on a baking tray lined with baking paper in a layer of 0.5 cm. Bake for 10-15 minutes at 180, until dry. Cool and soak in cherry juice.

Prepare the cream. Beat the sour cream and powdered sugar into a fluffy mass and apply to the cake in an even layer. Place the cherries on top. and roll it up.

Prepare the glaze. To do this, melt chocolate, butter and honey in a water bath or in the microwave, mix thoroughly and pour over the roll. Place in the refrigerator for 1 hour.

Snack:

Millefeuille with salmon and spinach

Place the dough layer without defrosting on a baking sheet lined with baking paper. Place in a cold oven, turn on the heat to 180 degrees and bake until browned (25-30 minutes). Defrost the spinach. If it is not chopped, chop it finely.

Cut the champignons into thin slices.

Melt the butter in a frying pan over medium heat and fry the spinach in it for two minutes.

Add the mushrooms and cook until the moisture has completely evaporated. Salt and pepper to taste. Cool completely.

Grind cottage cheese with horseradish and sour cream. Carefully separate the baked dough layer by layer (it crumbles, but that’s not a big deal). You should get 4 layers. Moreover, the convex upper layer will be the base, and the lower flat one will be the top.

Grease the bottom layer with half of the curd filling, lay out thin slices of smoked salmon.

Cover with a second layer. Place spinach and champignons on top. On top is the third layer and again a layer of curd cheese (put 2 tablespoons aside) and salmon. Cover with the remaining dough.

Wrap the resulting “cake” tightly in film and put it in the refrigerator for at least 1 hour. Then unwrap, grease with the remaining cheese and horseradish, sprinkle with almond petals and cut into 4 cakes with a very sharp knife.

Cheese sticks made from puff pastry


Preparation:

Preheat the oven to 220 degrees. Line a baking tray with baking paper.
Lightly beat the egg with a fork or small whisk. Brush it onto a sheet of puff pastry (previously defrosted). Then cut the dough into strips 1 cm thick.

Twist them into spirals and place on a prepared baking sheet (greased with oil, covered with baking paper or a silicone mat). Sprinkle with grated cheese and sesame seeds. Bake until golden brown, about 10 minutes. Let cool slightly before serving.

Salad with bell pepper, cucumber and cheese

Wash the lettuce leaves, dry them and tear them with your hands. We cut everything else: cucumbers, cheese, peppers into thin, short strips. I like green bell peppers in this salad. Its bitterness harmonizes perfectly with the cheese. We cut the onion into thin half rings. Hard cheese does not particularly want to be cut into strips, this is possible, but not essential).

Next we make the salad dressing. To do this, mix and beat the juice, vinegar, vegetable or olive oil, sugar and salt until the consistency of the emulsion. Season the salad, sprinkle lightly with pepper (to taste) and serve immediately.

Hot:
Puff pastry roll with turkey

Wash spinach or chard leaves and blanch for a couple of minutes in boiling water. Remove and place on a towel to blot off excess water.

Mix ground turkey with two raw eggs, ground breadcrumbs (I never use ready-made breadcrumbs, I always grind dry bread myself in a blender), mustard, salt and pepper well. In principle, you can add a little finely chopped and fried onion to the minced meat if you want. Mix the minced meat thoroughly.

Line a baking sheet with baking parchment and place a layer of ready-made, defrosted puff pastry. I usually transfer it from the freezer to the refrigerator in the evening and in the morning the dough is ready to use.
Place the minced meat on the dough in an even layer, stepping back one centimeter from the edge. Place a layer of blanched spinach leaves (if using) and 4 hard-boiled, peeled eggs on top of the minced meat.

Whisk one raw yolk with one tablespoon of cream. Use a brush to brush the edges of the dough and roll it up. Pinch tightly and turn seam side down. Brush the entire roll with yolk and bake in an oven preheated to two hundred degrees for 25 minutes. If the top starts to brown too much, cover it with parchment paper. Cool the finished puff pastry roll slightly, cut into pieces and serve.

First, remove the ice cream from the freezer and let it melt at room temperature. You want it to be at least soft.

Meanwhile, grind the cookies into fine crumbs. All methods are good here. You can put it in a bag and roll it several times with a rolling pin. Or just grind it in a blender. Add butter. Then combine all this with condensed milk. You should end up with a soft sticky mass that can easily take any shape.

And we begin to spread this mass into a mold covered with cling film. The edges of the film must hang down.

Try to spread the layer of cookies evenly; to do this, use a smaller pan. “Tamp down” the cookies as much as possible. Next, simply whip the cream according to the instructions on the package and combine it with the melted ice cream. Also add chocolate syrup to the ice cream and mix everything again. Now you can safely pour the sweet mass into the bowl. Cover it with the overhanging ends and place it in the freezer overnight. In the morning, carefully pull the ends of the film and turn the cake over onto a plate, then remove the film. Garnish with fresh berries or nuts if desired.

Preparation

  1. The meat needs to be peppered, salted and rubbed with oil.
  2. Bake in an oven preheated to 200 degrees for 10 minutes, cool, cut into thin slices.
  3. Next we make the sauce. To do this, grind tuna, capers, milk, salt, pepper and mayonnaise in a blender. We rub the mixture through a sieve.
  4. Pour the sauce onto a serving plate and place the meat and tomato halves here.
  5. Decorate with greens.

You will need:

  • tartlets - 15 pcs.;
  • avocado - 1 pc.;
  • garlic - 2 cloves;
  • lemon juice - 2 tsp;
  • soy sauce - 3 tsp;
  • peeled, boiled shrimp - 15 pcs.

Preparation

  1. Cut the avocado in half and remove the pit. Use a spoon to scoop out the pulp.
  2. Place garlic, avocado pulp, lemon juice, and soy sauce in a blender bowl. We chop everything. If desired, you can add chopped dill to the cream.
  3. Place the finished mixture on tartlets and decorate the appetizer with shrimp and herbs on top.

You will need:

  • eggs - 3 pcs. x 2 cakes;
  • sugar - 100 g x 2;
  • flour - 55 g x 2;
  • starch - 30 g x 2;
  • vanilla sugar - 1 tsp. x 2;
  • salt - a pinch;
  • dark chocolate - 50 g+360 g;
  • cocoa - 20 g;
  • cream 33% - 280 ml;
  • cream liqueur - 100 ml.

The components are indicated for one cake. The multiplication sign means that exactly the same amount will be needed for the other cake.

Preparation

First we prepare the light cake. For this:

  1. Beat the whites with salt.
  2. Separately, beat the yolks with sugar and vanilla.
  3. Very carefully mix the whites with the yolks, sifted flour and starch.
  4. Line a baking sheet (approximately 19x29 cm) with low sides with parchment and grease with vegetable oil.
  5. Preheat the oven to 220 degrees.
  6. Pour the dough onto a baking sheet and bake for 10–15 minutes.

Let's start preparing the dark crust

  1. Beat the eggs in the same sequence as when preparing the white cake. But add 50 g of chocolate melted in a water bath to the beaten yolks (before mixing with all the ingredients).
  2. Then mix everything and bake in the same way as baking the first cake layer.

When baking a sponge cake, the oven must not be opened, otherwise the dough will “fall”.

Once the cake is baked, remove it from the oven and let it cool for 10 minutes. Then run a knife along the sides of the pan to release any “sticky” dough and invert the pan onto a clean towel or plastic wrap to remove the crust. Peel off the parchment immediately. Refrigerate.

Preparing ganache (ganage)

  1. In a thick-bottomed saucepan, heat the cream and liqueur until bubbles appear.
  2. Separately, break the chocolate into small pieces and mix with hot cream.
  3. Beat the chocolate-cream mixture with a mixer until a smooth structure without lumps is obtained.
  4. Place in the refrigerator until the ganache thickens a little.

Let's start shaping the cake

  1. Divide each cake lengthwise into even pieces and cut. It turns out 4 cakes of 2 pieces of the same color.
  2. Cover a cutting board with cling film or parchment and place a dark biscuit on it.
  3. Beat the ganache again with a mixer. And grease the first layer of the future cake with it.
  4. So it is necessary to coat all the cakes, alternating layers and lightly pressing them. We do not lubricate the top layer with cream.
  5. Cover the cake with cling film and place in the freezer for 1 hour.
  6. Next, the cakes need to be cut. To do this, we focus on the view of the cake from the side of a shorter length. Place a knife on the top corner and make a diagonal cut, moving towards the opposite bottom edge of the cake. In this case, it is important to grab all the cakes at once so that you get two equal parts of the cake with a triangular cut.
  7. We connect both halves of the cake by smearing the side with cream and “gluing” them to each other. The cut should form a large triangle from two small ones.
  8. Cover the top of the cake with the remaining cream. Flatten with a knife and decorate to your liking. You can sprinkle grated cocoa, powdered sugar, nuts on top, or create a decor with butter cream.

Here you can experiment and use a white cake layer and dark cream, or make a dark base and use butter cream.

How to make buttercream

  1. You can beat 200 g of butter with 1 can of condensed milk.
  2. Or, instead of condensed milk, boil 0.5 cups of milk, add 1 cup of sugar to it and cook until the granulated sugar is completely dissolved. Cool the resulting syrup and beat with 200 g of butter, gradually adding sweet milk.

If desired, you can add fruit essence, bananas, citruses, and lemon zest to the cream.
